Once upon a time there was a woman who saw recipes for “skinny” Cauliflower Alfredo Sauce all over the interwebs. She became inspired to create her own Slightly Healthy Cauliflower Alfredo Sauce. It did NOT work out. There is a man who eats dinner with her every night. He said it was the worst thing she’s ever tried to make. She agreed. Then she decided that when she tries this again (and she will), she’s going to follow THIS recipe instead of trying to make her own. The End.
Have you ever heard/seen/eaten alfredo sauce made with cauliflower? My version was too cauliflower-ey. it was overwhelming. I cried to a chef friend about it, and he suggested soaking the cauliflower in buttermilk or cream before I use it. A “skinnier” way to soak the cauliflower would be in low-fat milk and a bit of vinegar.
My version was also a little gritty… but I think I can blame that on the fact that I own a pretty inexpensive (ie cheap) food processor.
Between the off taste & the gritty texture… this was a recipe fail.
But there’s always next time.
