Cheesy Veggie Bake

Adapted from Southern Fairytale

4 tablespoons Italian salad dressing
9 slices bacon, cooked & chopped
1 medium onion, chopped
3 medium zucchini, chopped
2 medium yellow squash, chopped
2 jalapenos, seeds removed & shopped
1 (15 oz) can corn, drained
6 oz light cheddar cheese, shredded
8 oz light sour cream

  1. Preheat oven to 350 degrees F
  2. Heat salad dressing in a large skillet over med-hi heat
  3. Add onions and bacon, then cook for 5 minutes or until onions are soft
  4. Stir in zucchini, squash, and jalapenos, cook for 10 minutes, or until veggies are slightly soft and browned
  5. Add corn, half of the cheese, and sour cream, mix well, and then spoon into a 9×13 casserole dish
  6. Top with remaining cheese, and bake for 15 minutes or until cheese is melted and veggies are hot
