Chicken Parm Meatball Casserole

Adapted from Buns In My Oven
 
For the Meatballs
1 lb ground chicken
1 cup panko breadcrumbs
1 egg
½ cup grated parmesan cheese

  1. Preheat oven to 425 degrees F, line a baking sheet w/ parchment paper
  2. Combine all meatball ingredients together, and form into one inch balls (I used a 1 inch cookie scoop), and place on prepared baking sheet
  3. Bake for 10-12 minutes, or until no longer pink

 

For the Casserole
12 oz whole wheat pasta shells
2 cups pasta sauce
2 cups shredded mozzarella cheese
1 teaspoon Italian seasoning

  1. Preheat oven to 350 degrees F
  2. Cook pasta for 1 minutes less than package directions, drain
  3. Stir pasta and sauce together, spread ½ in a 9×13 casserole dish, place the meatballs on top
  4. Sprinkle the mixture w/ ½ of the mozzarella, top with remaining pasta and sauce, than remaining mozzarella, sprinkle the Italian season over top
  5. Bake for 20 minutes, or until cheese is melted
