Chicken Sausage & Sweet Potato Chili

Adapted from Chocolate Covered Katie

1 (12 oz) package chicken sausage, sliced
1.5 lbs sweet potatoes, peeled & cubed
2 medium zucchini (15 oz), cubed
1 large onion (6.5 oz), sliced
2 parsnips (5 oz), peeled & diced
2 (15 oz) cans navy beans, rinsed & drained
1 (28 oz) can diced tomatoes
2 cloves garlic, minced
1 ½ tablespoons chili powder
1 teaspoon cumin
1 teaspoon salt

  1. Combine all ingredients in a LARGE pot
  2. Bring to a boil
  3. Reduce heat to medium, cover & cook until potatoes are soft
