Flatbreads

From Girl Vs. Dough. Makes 12.

 

1 packet active dry yeast

1 teaspoon sugar

2/3 cup warm water (110 degrees F)

2 cups bread flour, divided

1 cup whole wheat flour

1 teaspoon salt

½ cup warm milk

1 tablespoon olive oil

  1. Dissolve yeast & sugar in warm water, let sit for 5 minutes
  2. In the bowl of a stand mixer fitted with the dough hook add I cup bread flour, whole wheat flour, salt, milk, and olive oil to the yeast & sugar mixture, stir until just combined
  3. On med-low speed knead the dough for 5 minutes, adding enough bread flour to make the dough smooth, slightly sticky, and pulls away from the sides of the bowl
  4. Cover the dough with a damp towel or plastic wrap and let rise for 1 hour, or until doubled
  5. Divide dough into 12 evenly sized balls, cover and allow to rest for 10 minutes
  6. Meanwhile heat a large skillet over med-high heat
  7. Roll each dough ball into a circle about 1/8 inch thick, cook in the skillet for 2-3minutes or until tops are bubbly, flip and cook on the other side for 2-3 more minutes or until cooked through
