Honey Sriracha Chicken Lettuce Wraps

Adapted from Add a Pinch


1 tablespoon olive oil

1 ½ lbs chicken breasts, diced

1 cup thin sliced baby carrots

3 stalks celery, diced

½ onion, diced

¼ cup honey

2 tablespoons Sriracha

1 tablespoon soy sauce

2 cloves garlic, minced

1-2 heads Bibb (aka Boston) lettuce

1. Heat oil in a skillet, add chicken and cook until juice run clear

2. Add remaining ingredients, cook until sauce is thickened and chicken is well coated

3. Separate lettuce leaves and top with cooked chicken mixture

4. Fold lettuce around chicken mixture and EEEEEAT!


This makes approx. 24 oz of chicken mixture, at 52 calories per ounce
