Maple Bacon Corn

Adapted from Picky Palate

1 tablespoon butter
2 bell peppers, chopped (8.5 oz)
1 medium onion, chopped (8.5 oz)
2 (15 oz each) cans corn, drained
9 slices bacon, cooked & crumbled
4 tablespoon maple syrup
¼ teaspoon salt
¼ teaspoon pepper

  1. Melt butter in a large skillet, add onions and sauté for 5 minutes or until soft
  2. Stir in remaining ingredients and cook an additional 5 minutes, or until corn is hot
  3. Reduce heat to simmer until ready to serve

Makes 8, ½ cup servings with 147 calories each.
