Quick Tomato Soup

Makes 7-8 cups. Adapted from Food.com


1 tablespoon oil

1 medium onion, diced

4 cloves garlic, minced

1 (28 oz) can diced tomatoes

3 cups reduced sodium chicken broth

1 (6oz) can tomato paste

Salt & pepper, to taste

1. Heat oil in a large sauce pan, then cook the onion & garlic until soft

2. Add remaining ingredients and bring to a boil

3. Boil for 5 minutes, then reduce to a simmer

4. Simmer until reduced/ thickened 15-30 minutes

5. Puree in a food processor or w/ an immersion blender
