Single Serve Chocolate Chip Pancakes

Adapted from Alex Likes to Cook

 

1/3 cup whole wheat flour
¼ teaspoon baking soda
½ teaspoon baking powder
Pinch cinnamon
Pinch salt
1 egg
¼ cup almond milk
1 teaspoon vegetable oil
½ teaspoon vanilla
1 tablespoon mini chocolate chips

  1. Whisk dry ingredients together
  2. In a separate bowl, whisk the wet ingredients together
  3. Whisk wet & dry ingredients together until JUST combined & slightly lumpy, stir in chocolate chips
  4. Pour batter in desired size pancakes into a skillet over medium heat until bubbles form in the tops
  5. Flip and cook for another 1-2 minutes
