Stuffed “Baked” Potatoes (Slow Cooker)

4 medium potatoes, scrubbed

1 lb chicken breasts, cooked & cut into pieces

1 medium head of broccoli, steamed & cut into pieces

4 oz shredded cheese

1. Poke holes all over potatoes with a fork, then rub olive oil on the skin, wrap in tin foil, place in slow cooker & cook on high for 2 ½-4 hours or low for 8-10. Potatoes are cooked when a fork slides easily through

2. Open up the foil, cut a slit down the middle of the potato then pinch the ends to “open” it, scoop a little bit of potato out of the middle

3. Fill the cavity with cooked chicken & broccoli, then top with shredded cheese

4. Turn the slow cooker up to high, put the filled potatoes inside and cook until the cheese is melted.
