Chocolate Banana Bread

3 ripe bananas (approx. 1 cup)

½ cup unsalted butter, melted

¾ cup light brown sugar

1 egg

1 teaspoon vanilla

1 teaspoon baking soda

¼ teaspoon salt

½ teaspoon cinnamon

1 cup all-purpose flour

½ cup cocoa powder

½ bag (approx. 1 cup, or 6 oz) semi-sweet chocolate chunks

1. Preheat oven to 350 degrees F, lightly grease 9×5 loaf pan*
2. In a large bowl, mash bananas, then stir in butter & brown sugar until combined
3. Add egg and vanilla, and stir until combined
4. In another bowl whisk remaining ingredients together (except the chocolate chunks)
5. Gradually stir the dry ingredients into the wet ingredients until just combined, then stir in the chocolate chunks
6. Pour into the loaf pan and bake for 55-65 minutes, or until a tooth pick inserted in the middle comes out clean.*

*I used 3 disposable mini loaf pans and baked them for about 30 minutes, instead of the larger 9×5 pan.
