Kinda Healthy Banana Bread Muffins

Slightly adapted from Feed Your Athlete. Makes 18 muffins.

2 eggs
2/3 cups sugar
2 very ripe bananas, mashed
¼ cup sugar free apple sauce
1/3 cup skim milk
1 tablespoon coconut oil, melted
1 tablespoon vanilla
1 cup all purpose flour
¾ cup whole wheat flour
2 teaspoons baking powder
½ teaspoon baking soda
½ teaspoon salt
2/3 cup mini chocolate chips

  1. Preheat the oven to 350 degrees F, and line muffin tins w/ paper liners (or place 18 silicone liners on a baking sheet)
  2. Beat the eggs and sugar together until light and combined
  3. Add banana, apple sauce, milk, coconut oil, and vanilla, beat until combined
  4. Whisk together flours, baking soda, baking powder, and salt, then gradually add to the wet ingredients and beat until just combined
  5. Fold in chocolate chips
  6. Pour into prepared muffin tins (or silicone liners) and bake for 20-23 minutes
