(Slightly Healthier Than Regular) Banana Bread Muffins

Adapted from All Recipes. Makes 12 muffins.

¾ cup all-purpose flour
¾ cup whole wheat flour
1 ¼ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon cinnamon
¼ teaspoon salt
½ cup light brown sugar
2 egg whites
3 ripe bananas, mashed
4 oz unsweetened apple sauce
2 teaspoons vanilla
½ cup chocolate chips

  1. Preheat oven to 350 degrees F, line muffin tin w/ paper liners
  2. Whisk both flours, baking powder, baking soda, cinnamon, and salt together
  3. In a separate bowl whisk brown sugar, egg whites, mashed bananas, apple sauce, and vanilla together
  4. Stir the mixtures together until JUST combined, then stir in chocolate chips
  5. Divide evenly into muffin tins, and bake for ??, or until toothpick inserted in the middle is clean
