Spinach Pizza Dough

Adapted from The Spiffy Cookie
 
6 oz spinach
½ cup warm water, plus 2 tablespoons
1 package active dry yeast
1 teaspoon sugar
1 teaspoon salt
1 tablespoon oil
3 cups bread flour

  1. Bring a pot of water to a boil, add spinach and boil until it’s wilted and dark green, drain it and squeeze all the water out, and then pulse it in a food processer until pureed
  2. Meanwhile, add ½ cup warm water (around 110 degrees F) to the bowl of a stand mixer fitted with the dough hook, sprinkle yeast & sugar over the top and gently stir, allow to sit for 5-10 minutes to foam
  3. Add oil, 1 cup flour, and pureed spinach, turn the mixer on low to combine, add 2 tablespoons water, turn mixer up to med-low speed and gradually add remaining flour, continue kneading until a ball forms
  4. Coat a bowl with cooking spray (or oil), put dough into the bowl, cover with a damp kitchen towel and allow to rise in a warm place for 30 minutes, or until doubled
  5. Roll out onto a lightly floured surface, and bake in a preheated oven at 400 degrees F for 20-30 minutes, or until crust is golden on the edges
