Frosted Oreo Brownies

Adapted from Crazy For Crust. makes 16.

Brownies
4 oz semi sweet baking chocolate
¾ cup unsalted butter
¾ cup + 2 tablespoons artificial sweetener
¾ cup Egg Beater (egg replacement)
1 tablespoon vanilla
2 tablespoons dark cocoa powder
1 cup all-purpose flour
¾ cup chocolate chips
16 Double Stuf Oreos

  1. Preheat oven to 350 degrees F, line an 8×8 pan with parchment paper & lightly grease it
  2. Melt chocolate and butter together in the microwave
  3. Stir butter/ chocolate mixture with artificial sweetener, egg beaters, and vanilla until combined
  4. Whisk flour and cocoa powder together, then stir into the wet ingredients until just combined
  5. Stir in chocolate chips
  6. Spread ½ the batter into the prepared pan, top with Oreos, spread remaining batter over the top
  7. Bake for 25-30 minutes, or until toothpick inserted 2” from the edge comes out *mostly* clean
  8. Cool completely and remove from pan before frosting (recipe below).

 

Frosting
¾ cup unsalted butter, softened
1 -1 ½ cups powdered sugar
½ -1 tablespoon milk
1 teaspoon vanilla

  1. Beat butter and 1 cup powdered sugar together
  2. Add ½ tablespoon milk, and vanilla, beat until combined
  3. Add remaining powdered sugar, beat until combined
  4. Add milk to reach desired texture/ consistency
