Amaretto Butter Cookies

1 cup butter (unsalted)
1 cup powdered sugar (set aside 1/2 to “roll” cookies in)
2 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup amaretto liqueur
1/2 cup chopped almonds
 
1. pre-heat oven to 350 F
2. cream butter and powdered sugar until smooth
3. stir in flour and salt, slowly
4. add amaretto
5. fold in almonds
6. roll into teaspoon sized balls, place on cookie sheet and bake for 8-10 min
7. let cool for 5 min, roll in powdered sugar, finish cooling on wire rack.
