Chocolate Chip PB Oatmeal Cookies

Adapted from What’s Gabby Cooking. Makes 3 dozen.


½ cup unsalted butter, softened

1 cup packed light brown sugar

1 egg

1 ½ teaspoons vanilla

½ cup peanut butter

1 cup all purpose flour

½ teaspoon baking soda

Pinch salt

1 cup oats

1 ½ cups chocolate chips

1. Preheat oven to 350 degrees F, line baking sheets with parchment paper
2. Cream butter & sugar together until fluffy, about 2 minutes
3. Add egg and vanilla, mix until combined, then mix in peanut butter
4. Whisk flour, baking soda & salt together, then mix it into the wet ingredients until just combined
5. Stir in oat and chocolate chips
6. Scoop (using a 1 ½” cookie scoop) onto prepared cookie sheets, bake for 10min, flatten slightly with a fork, then bake for 2 more minutes,, or until edges are lightly browned
7. Cool for 2 minutes on cookie sheets, then transfer to a wire rack to finish
