Coconut Oil Chocolate Chip Cookies

Slightly adapted from Sweet Treats & More

1 cup coconut oil
1 cup packed light brown sugar
1 cup sugar
2 large eggs
2 teaspoons vanilla
1 ½ cups whole wheat pastry flour
1 ½ cups all purpose flour
1 teaspoon baking powder
¾ teaspoon baking soda
½ teaspoon salt
2 cups chocolate chips

  1. Preheat oven to 350 degrees F, line baking sheets with parchment paper
  2. Beat coconut oil and sugars together until fluffy, beat in eggs one at a time, then the vanilla
  3. In a separate bowl whisk together the flours, baking powder, baking soda, and salt
  4. Gradually add dry ingredients to the wet, stirring until combined
  5. Stir in chocolate chips
  6. Bake cookies
    • For “normal” sized cookies: use a 1 ½ inch cookie scoop and bake for 8-10 minutes
    • For HUGE cookies: scoop dough using a ¼ cup measuring cup, flatten slightly, and bake for 12 minutes
  7. Cool slightly on the baking sheet, then transfer to wire racks to finish
