Raisin Bran Oatmeal Cookies!!

Adapted from the Feed Your Athlete Cookbook, makes about 4 dozen
¾ cup unsalted butter, room temp
2/3 cup granulated sugar
½ cup packed light brown sugar
2 large eggs
1 cup whole wheat flour
1 cup all-purpose flour
1 teaspoon baking soda
Pinch of salt
2 cups slightly crushed Raisin Bran
1 cup quick oats
1 cup raisins

  1. Cream the butter and sugars together until light and fluffy, approx. 3 minutes
  2. Beat in eggs one at a time
  3. Whisk ww flour, ap flour, baking soda, and salt together
  4. Gradually add the flour mix to the wet mixture, stirring until just combined
  5. Fold the raisin bran, quick oats, and raisins into the dough
  6. Chill the dough for 1-2 hours
  7. Preheat the oven to 325 degrees F, line baking sheets w/ parchment paper
  8. Using a 1 inch cookie scoop and drop the cookies onto baking sheets
  9. Flatten slightly, and bake for 9-11 minutes
  10. Cool on the cookie sheets for 5-10 minutes, and then finish cooling on wire racks
