Slightly Healthier Than Regular Chocolate Chip Cookies

Adapted from Tollhouse. Makes 3 dozen (I think)

2 ¼ cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
1 cup unsalted butter, softened
¾ cup artificial sweetener blend (I used Domino sugar & stevia blend)
2 teaspoons molasses
1 teaspoon vanilla
½ cup Egg Beaters (egg substitute)
1 ½ cups chocolate chips

  1. Preheat oven to 350 degrees F
  2. Whisk flour, baking soda, and salt together, set aside
  3. Cream butter, artificial sweetener, and molasses until smooth and creamy
  4. Add egg beats and vanilla to the butter mixture, beat until combined
  5. Gradually stir the flour mixture into the butter/ egg beater mixture until combined
  6. Stir in chocolate chips
  7. Using a 1 ½ inch cookie scoop drop onto baking sheets and flatten slightly
  8. bake for 8-10 minutes, cool 2 minutes on the sheet, then finish cooling on wire racks
