Basic Yellow Cupcakes & Chocolate Buttercream

Basic Yellow Cake
1 cup unsalted butter, room temperature
2 eggs
2 teaspoons vanilla
1 2/3 cup sugar
3 cups cake flower, sifted
2 ¼ teaspoons baking powder
½ teaspoon salt
1 1/3 cup milk
1. Preheat oven to 350 degrees F
2. Cream butter & sugar until light & fluffy, approx. 2 minutes
3. Beat in eggs, one at a time, then vanilla
4. Whisk flour, baking powder, and salt together
5. Alternate adding flour mixture and milk to butter/sugar, starting and ending w/ the flour
6. fill cupcake tins 3/4 full
7. Bake for 15-20 minutes or until tooth pick inserted in the middle comes out clean.
 
Chocolate Buttercream
1 c. semi-sweet chocolate chips
1/2 c. butter, softened
2 c. powdered sugar
3-5 tbsp. milk
1/2 tsp. vanilla extract
1. Melt chocolate chips according to package directions, let cool to room temperature
2. In large bowl, beat butter until creamy.
3. Add 1 cup powdered sugar, beat until combined, then add 1 ½ tablespoons milk and beat
4. Add remaining powdered sugar, beat, then add another 1 ½ tablespoons milk, beat until combined
5. Add melted chocolate and vanilla; beat until smooth.
6. Add more milk if frosting needs to be thinned.
