Easy Buttermilk Biscuits

makes 18
 
2 cups all-purpose flour
2 teaspoons baking POWDER
1 teaspoon salt
¼ teaspoon baking SODA
7 tablespoons unsalted butter, cold
¾ cup reduced fat buttermilk, cold
+/- 1 tablespoon unsalted butter, melted
  1. Preheat oven to 425 degrees F, line a large cookie sheet with parchment paper
  2. Whisk flour, baking powder, salt, and baking soda together
  3. Cut butter into slices, then cut it into flour mixture, until all the big chunks of butter are gone, and the mixture looks crumbly (about 5 minutes)
  4. Make a well in the center of the flour mixture, pour the cold buttermilk into it, stir until just combined
  5. Turn dough onto lightly floured surface, pat into a rectangle, fold that rectangle into 3rds.
  6. Turn dough halfway, and repeat step 5
  7. Repeat step 6
  8. Roll dough out to about ½ inches thick
  9. cut out biscuits using a 2 ½ inch round cutter, and transfer to the lined cookie sheet
  10. bake for about 15 minutes, or until tops are barely brown
