Quick Dinner Rolls

 (from Crazy For Crust)- makes 12
1 cup warm water
1/3 cup olive oil
2 tablespoons sugar
2 packets active dry yeast
½ teaspoon salt
3 cups all-purpose flour
1. Preheat oven to 400 degrees F, and lightly grease a 9×13 baking dish
2. In the bowl of a stand mixer (with the dough hook attached) combine water, olive oil, sugar and yeast, let sit for 15 minutes
3. Mix in salt & flour, start on “stir” setting until the flour starts to incorporate, then switch up to “2” for a few seconds, then “3”until the dough forms a ball, and the sides of the bowl are (almost) clean (I had to add an extra tablespoon of flour, my dough was still too wet)
4. Place the dough on a lightly floured surface, and divide into 12 evenly sized balls
5. Put them into the baking dish, then allow them to sit for another 10 minutes
6. Bake for 10 minutes or until the tops are golden brown
