Candied Pecans

2 cups light brown sugar
2 cups granulated sugar
2/3 cup water
2 tablespoons unsalted butter
4 cups pecan halves
1 tablespoon ground cinnamon
1/4 teaspoon ground cloves
1/4 teaspoon ground ginger
1. line a large baking sheet with parchment paper
2. combine sugars, water, and butter in a large sauce pan over medium heat, bring to a rapid boil
3. stir in pecan halves, cook (and continue stirring) until large bubbles form and mixture darkens slightly
4. stir in spices
5. remove from heat, spread in an even layer on cookie sheet and cool completely
6. break any large chunks into smaller pieces
7. eat them all, “forget” to save them for anyone else
