Cinnamon Apple Hand Pies

Dough
2 cups all-purpose flour
1 tablespoon sugar
1 teaspoon salt
1 cup unsalted butter, cut into chunks
1 egg
2 tablespoons milk
 
1 egg, lightly beaten
 
Filling
¼ cup light brown sugar
1 ½ teaspoons all-purpose flour
½ teaspoon cinnamon
1-2 small apples, skinned & sliced
 
1. Whisk flour, sugar, and salt together, then cut in the butter, until the mixture is crumbly
2. Whisk one egg and the milk together, stir into dough until everything sticks together, knead until smooth
3. Divide dough in half, roll each out to about 1/8 inch thickness, cut each half into 14 circles using a 3inch biscuit cutter
4. Brush those with the beaten egg
5. Make the filling by combining light brown sugar, flour, and cinnamon
6. Sprinkle ½ tablespoon of brown sugar mixture in the middle of 7 circles, top with apple slices
7. Place remaining dough circles on top of filled circles, pinch the edges closed, then press along the edge with a fork
8. Place pies on to a baking sheet lined with parchment paper, poke a few holes in the tops
9. Chill in the fridge while the oven preheats to 350 degrees F, then bake for 15-25 minutes or until dough is baked through
