Coca-Cola Cake

Adapted from Southern Living Heritage Cookbook

 
Cake
2 cups all purpose flour
2 cups sugar
1 teaspoon baking soda
1 cup cola
1 cup unsalted butter, cut up
2 tablespoon dark cocoa
½ cup buttermilk*
2 eggs, beaten
1 teaspoon vanilla
1 ½ cup mini marshmallows

  1. Preheat oven to 350 degrees F and lightly grease a 9×13 pan
  2. Whisk together flour, sugar, and baking soda in a large bowl, set aside
  3. Combine cola, butter, and cocoa in a saucepan over medium-low heat, stir until butter is just melted, gradually stir into flour mixture, allow mixture to come to room temp
  4. Whisk together buttermilk, eggs, and vanilla, and then stir it into the flour mixture until combined
  5. Stir marshmallows into batter, and then pour into prepared pan, bake for 30 minutes, or until a toothpick inserted in the middle comes out mostly clean
  6. Cool slightly and frost with Cola Frosting (recipe below)

*I used milk and vinegar instead.  Read the post for more info!

 
Frosting
½ cup butter
¼ cup cola
3 tablespoons dark cocoa
3 cups powdered sugar
1 teaspoon vanilla
+/- ½ cup crushed pecans, toasted

  1. Combine butter, cola, and cocoa in a saucepan over medium heat, stir until butter is melted
  2. Remove from heat and whisk in powdered sugar and vanilla until smooth
  3. Let stand for a few minutes, and then pour over cake
  4. Sprinkle pecans over top
