Homemade Peppermint Patty Pretzels

Makes 5 ½ doz. Peppermint patty recipe adapted from Mom On Time Out.
1/3 cup light corn syrup
5 tablespoons butter, softened
2 teaspoons peppermint extract
½ teaspoon salt
4-5 cups powdered sugar
132 pretzels
3 ¾ cup chocolate chips melted, to dip pretzel patties in

1. Stir together corn syrup, butter, peppermint extract, and salt until well combined

2. Stir in 1 cup powdered sugar until combined

3. Gradually add more powdered sugar, stirring then kneading until combined

4. Add as much powdered sugar as needed until dough is stiff and no longer sticky

5. Roll into ½ tablespoon sized balls, then gently press between 2 pretzels

6. Refrigerate for 60-90 minutes or until firm

7. Dip pretzel patties in melted chocolate, lay on parchment paper to set

8. Scarf a handful down, then pretend to be ashamed
