Peppermint Cookie Dough Truffles

 makes ? (I forgot to count!)
 
½ cup margarine (or unsalted butter)
¾ cup packed light brown sugar
1 teaspoon vanilla
2 cups all-purpose flour
1 (14oz) can sweetened condensed milk
8 candy canes, coarse crushed
18 Andes mints, coarse chopped
1 ¼ cups mini semi-sweet chocolate chips
1-2 bags semi-sweet chocolate chips
+/- sprinkles for decoration
1. Cream margarine & brown sugar
2. Alternate adding condensed milk and flour until incorporated
3. Stir in mini chocolate chips, candy canes, and Andes
4. Chill for an hour
5. Roll into tablespoon sized balls
6. Freeze overnight (optional)
7. Melt semi-sweet chocolate chips, dip cookie dough balls into slightly cooled melted chocolate
8. Allow to set, store in the fridge, serve cold
