Stuffed Cookie Dough Truffles

makes approx 34
 

½ cup margarine (or unsalted butter), room temperature
¾ cup packed light brown sugar
1 teaspoon vanilla
2 cups flour
1 (14oz) can sweetened condensed milk
1 (12oz) bag mini chocolate chips
1(12oz) bag chocolate chips (for melting)
34 “bite sized” candies of your choice

  1. Cream margarine & sugar
  2. Add vanilla and condensed milk, beat until well combined
  3. Gradually add flour, beat until combined
  4. Stir in MINI chocolate chips
  5. Refrigerate dough for 30 min- 1 hour
  6. Scoop out slightly less than a tablespoon full of dough, place a “bite sized” candy on top, then cover with another tablespoon full of dough, roll into a ball
  7. Freeze for at least 2 hours (overnight would be even better)
  8. Melt chocolate according to package directions
  9. Dip chilled cookie dough ball into melted chocolate, allow to firm/ harden, then dip the other side
  10. Allow to harden, then store in the fridge
